Meet Your New Favorite Way to Make Gluten-Free Hamburger Buns

Eating hamburgers on a gluten-free diet can be a little sad. You have a few options, none of them completely satisfactory: 1) Skip the bun entirely and dig into the burger with a knife and fork. But eating burgers is supposed to be a messy, hands-on affair. Cutting and spearing a burger just feels...wrong. 2) You can wrap your burger in lettuce and pick it up with your hands, but that never quite holds together: as the juices start leaking, the lettuce grows limp and warm. Then there's always the third option: use store-bought gluten-free buns, which, depending on where buy your groceries, may or may not be available—and may or may or may not taste like cardboard.

So sometimes it's best to take matters into your own hands and make your own gluten-free hamburger buns. And the easiest, fastest way to do that is with a pot full of sticky, white sushi rice.

I first saw a rice burger at Yonekichi here in NYC, but apparently they've been popular in Japan for a while now. Patties of sushi rice are seared on a griddle until lightly browned and crisped, then placed around a burger (or other sandwich fillings), so you can pick the whole thing up in your hands and enjoy. Rice buns are distinct enough from hamburger buns that you don't experience them as inferior, gluten-free imitations of the real thing, but rather appreciate them for what they are: fun, crisp-edged patties of rice that are delicious when paired with a burger. (Yes, they can crumble a bit as you eat them, but that only adds to the experience.)

Sushi Rice
Wash the calrose rice and cook with water in rice cooker.
Once rice is cooked, mix in the sushi vinegar mix and leave aside to cool. Cover with a damp cloth.
Breaded Chicken Patty
Place chicken in a mixing bowl. Add in the bread crumbs, onion, egg, garlic powder, salt and pepper. Place remaining bread crumbs on a plan.
Divide chicken meat into 4 piles and shape into a 5inch diameter size patties. Coat each patty with bread crumbs.
Heat olive oil in a large non-stick skillet over medium heat and fry patties until golden and cooked through, about 5 minutes per side.
Rice Burger
Use a piece of cling wrap, mould the pink, white, yellow and brown colored rice into 8 round circle rice ball about 4 inch in diameter to make the rice burger.
Cut out the piggy ears and nose from a piece of ham.
Cut out the mouth of the ducky from the baby carrot.
Cut the facial parts (eyes, nose and mouth) out from a piece of seaweed. Place the seaweed on the rice burger.
Assemble the facial expression on the rice burger.
To Assemble
Place the bottom rice patty on a piece of lettuce, stack the chicken patty on top with a slice of cheese and lettuce or tomato and stack the top rice patty with the animal expression over.
Place on a wooden board to serve with salad mix at the side.
